Recipe: Summer Soup – Gazpacho!

My boyfriend is originally from Spain, and he is also a wonderful cook, so when the Summer comes, I beg for him to make me his Gazpacho. Gazpacho is a refreshingly cool Spanish soup and the first time I tried it, I was hooked! My boyfriend's family typically eat gazpacho in the morning and call it their 'rocket fuel' - and it certainly is nutritious fuel for your body! Gazpacho is high in antioxidants and is wonderful for your blood pressure, eye health, protection against cancers (such as prostate cancer) and has anti-inflammatory and anti-aging properties! Just thinking about it now makes me want some!
